“Chili” is the name of cayenne pepper Capsicum Annum, in broad meaning it is applied to the most hot types of red pepper. The word which sounds close to the name of the country Chili in fact comes from Aztek word which means “red”.

American scientist Wilbour Scowill developed pepper burning scale, estimating peppers by concentration of capsaicin based on organoleptic study of pepper extracts. Capsaicine stimulates heat receptors, giving burning properties to peppers. Apart of cooking, hot pepper is widely used in medicine in composition of many heating alcohol solutions and plasters, pain killers and ointments. Capsaicin is used in security industry as component of gas pistols and pepper guns.

By scale where bell peppers have meaning of 0, hot Thai chili 50-100, Tabasco 5,000, and jalapeños 8,000, Spanish Naga (Gibralta) pepper has 1086844 points.

This extremely hot pepper that appeared in result of selection in British lab, grows in Spain. Incredible burning is reached by cultivation in closed polyethylene tunnels, in closed premises with very high temperature. This artificially selected type of pepper cannot be found in traditional national cuisine.
